What should I eat for dinner tonight? Chicken sounds good; maybe a quesadilla!
How many times have you answered this question in such a way? Often meals are planned around the meat being served, and although lean protein options should be present, creating meals around this particular food group often causes us to leave out those leafy green veggies and flavor-packed fruits we need at each meal too.
So what if we approached meal planning differently? Why not create a meal beginning with the hardest to squeeze in? Lets work our meals backwards and begin with the produce! This way, we’ll be sure to not leave it out. Planning a meal this way makes it easy to get in more nutrient-rich foods and gives you the opportunity to reimagine your plate. Its sort of like arriving at your destination taking only back roads. Its a little more adventurous, a little more fun, and you still end up at your healthy destination – a well-balanced, tasty meal.
Challenge yourself this week to devise a meal that is centered around a vegetable. Earlier this month, I helped my healthy eating group at thePlate Boutique do just that.
