I have been on a MAJOR breakfast kick lately. It all started with the realization that my breakfasts were kind of lacking. Typically, I would start my day with a plain, boring old bagel and call it good. Lame. And, embarrassingly, NOT what I would recommend you to do for your first meal of the day! Of course, its better than eating nothing, but come on… I could do better.
So over the last few weeks I’ve been coming up with all sorts of easy, more nutrient-rich options for myself and for you to enjoy. Since my breakfast is typically the only meal I eat pre-caffeinated, it needs to be ridiculously simple. If its not, I’m not going to make it or make it right – hence the reliance on the oh-so-simple bagel. So easy I can make it on auto-pilot.

As I’ve toyed around with different breakfast ideas, waffles have really turned out to be a game changer for me. Quick and easy, just like my trusty old bagel, yet offering up a lot more possibility.
