Be the hostess with the most-ess at your next game day gathering with these delicious loaded sweet potato rounds!
Our small town community came alive this weekend as Central Michigan University celebrated homecoming and the football team played in its first MAC game of the season. SPOILER ALERT – we won! Woop woop!
My boys and I didn’t actually watch the game though. It was cold and rainy, so instead we decided to host our own game day party at the house. The weather stayed nice long enough for us to go downtown and watch the homecoming parade and we apparently picked a great spot to watch because the boys were given candy, frisbees, t-shirts, and footballs while we watched bands, cheerleaders and community organizations go by. I don’t remember getting so much swag at a parade before, but it definitely made the trek through the crowds worth while.
Wearing our CMU maroon and gold, we then headed home for an afternoon of video games, movies, and delicious game day inspired food.
I thought it would particularly fun to try and make a game day snack that incorporated our school colors while also being a delicious, possibly more nutritious twist on a classic. Enter my loaded sweet potato rounds.
These rounds are my take on loaded baked potato skins, and oh my goodness, they are addictive! They were also pretty easy to make – simply slice up your sweet potatoes, roast for about 20 minutes, top with your favorite potato fixings, and then drizzle with a little bit of honey mustard. Actually, you could get away without using the mustard, but to be CMU official, the mustard was really an essential component of the dish.
This dish was a little too fancy for my boys, so they requested I make pizza instead. Which I did. But for your grown-up guests, this is sure to be a hit!
