Toby is the founder of Toby Amidor Nutrition, where she provides nutrition and food safety consulting services. She is also the author of the forthcoming cookbook, The Greek Yogurt Kitchen: More Than 130 Delicious, Healthy Recipes for Every Meal of the Day (Grand Central Publishing, 2014), a nutrition expert for FoodNetwork.com where she writes for their Healthy Eating Blog, a columnist for Today’s Dietitian Magazine, and an adjunct professor at Teachers College, Columbia University. Toby trained as a clinical dietitian at New York University. Her expertise includes over 14 years of experience in various areas of food and nutrition. Through ongoing consulting and faculty positions, she has established herself as one of the top experts in culinary nutrition, food safety and media (Internet, TV, and print).
As a phenomenal expert and speaker, we asked Toby to spread some light on the many benefits of avocados in a special webinar presentation we hosted a few weeks ago. Here were just a few things she shared:
There are more than one type of avocado. Actually, there are close to 500 different varieties. Of them, Hass avocados are one of the most common, and a type you should really get to know. Patented in 1935 by Dr. Rudolph Hass, this variety is known as the “year round” avocado and is available 365 days a year. Its easy to identify by its bumpy, oval shape and dark green, purplish black color.
Avocados are incredibly nutrient-dense! Seriously! Believe it or not, avocados can provide nearly 20 vitamins, minerals and phytonutrients to your diet in as little as one 50 calorie serving! So to reap the benefits, you really don’t have to get too crazy. Even adding in just one serving of avocado to your current meal plan really can pay off big. Consider it your own personal nutrient booster!
Avocado eaters are often better eaters. If you want to eat better, maybe you simply need to incorporate more avocado into your day. According to data from NHANES 2013, individuals who incorporate avocados into their day tend to have superior diet quality than those who don’t. Not all that surprising when you think about how nutrient dense an avocado really is. Plus, adding an avocado to your day may make your meals more satisfying – after all, a little bit of naturally good fat can make your healthy meal a little more palatable and enjoyable.
Guacamole isn’t the only way to eat an avocado. Although I love guacamole, its not the only way to add an avocado to your day. In fact, there are many MANY ways to make good use of that avocado. From appetizer to dessert, recipes abound. Toby even showed us how to make this easy Avocado-Mango Topper. Its a perfectly simple way to take your chicken or fish to the next level.
