Whether you are a seasoned pro in the kitchen or just starting out, I’m sure everyone can remember this feeling of making a recipe for the first time. From the food failures to fabulous feats, our Recipe Guru in the Spotlight shares her kitchen adventures and inspirations in her blog, Michelle’s Kitchen.
Michelle is a Certified Dietary Manager and works as a Dietetic Technician in Williamsburg Virginia. With her background in Dietetics from Central Michigan University, she is not only educated about food, she knows how to prepare it too! Michelle has been developing her cooking skills for quite some time now. Through college and shortly after, she worked to hone her skills as a baker, cook and a dietary aide.

Meet Michelle! Our Recipe Guru in the Spotlight!
How did you start your blogging adventure?
During my senior year of college, I starting writing quick articles on local sustainable food for a website. Although my writing skills clearly needed some work, I was hooked on sharing my passion for healthy food with others. After I graduated with my degree in Dietetics I started my blog, Michelle’s Kitchen and it has grown from there.
What is your favorite post up and running on your blog and why?
Definitely my recipe for Pumpkin Granola Bars. This recipe really encompasses what my blog is all about: healthy can be delicious too. Pumpkin is such a popular ingredient for fall treats and although it’s a nutritious ingredient, many of the recipes I see are high in calories and sugar. I love to showcase these kinds of ingredients in healthful ways.
Do you have a personal nutrition mantra that you live by?
I love Michael Pollen’s mantra: “Eat food. Not too much. Mostly Plants.” It’s so simple. I do my best to eat real foods, limit the overly processed stuff, practice moderation, and try new vegetables often.
What three foods do you always have stocked in your fridge?
Eggs because they make such a quick meal anytime; just add whole-wheat toast and veggies.
Baby carrots because they are an easy on the go snack.
FAGE 2% Greek yogurt because it’s a versatile ingredient that provides calcium and protein (try adding a dollop to scrambled eggs instead of milk, so yummy!)
Who or what inspires you to be a healthy, happy eater?
Healthy eating makes me feel great! I stay motivated to eat healthy because when I do get off course, I find I have less energy and feel very blah. I find most of my recipe inspiration at the farmers market.
