Elise loves running, cycling, hiking, and playing tennis. Really, any sort of physical activity will do. But there is even more to Elise and her blog than good food and a good workout. Elise also enjoys spending time with her family and traveling. She was even lucky enough to study abroad in Barcelona. Meet Elise! Our Recipe Guru in the Spotlight!
Elise: I initially started blogging because I love to eat, but I was having a lot of GI issues and was hoping to keep track of exactly what I ate and how I felt. And then other people started reading! It’s still weird to me.
Elise: It’s nearly impossible to choose a favorite post! I put so much of myself into everything I write, so I’m pretty proud of the blog, but I guess the readers request section (under FAQs) is a collection that most people find useful – with everything from roasting veggies 101, to packing work lunches, to my favorite teas, to making seitan.
Elise: I like what I call “hippie bowls” which are made up of some kind of grain + a veggie or green + a (vegetarian) protein. You can make endless combos…quinoa + carrot + chickpeas, brown rice + spinach + tempeh, millet + broccoli + seitan, etc. Topped in soy sauce or a simple balsamic & olive oil dressing. Yum!
Elise: Plan ahead. Prep for the week when you have time and shop with actual meals in mind. You’ll end up eating way better throughout the week as a result! And don’t forget to treat yourself to fun meals out every once in a while.
Elise: Dinner because I can plan and brainstorm the most throughout the day.
