Have I told you about my weird breakfast thing? Okay, maybe its not that weird, but its definitely a thing. I’m not a cold breakfast sort of person. I need my breakfasts to be warm and toasty. There is just something more satisfying to me about the warmth, and as Michigan gets colder and colder, it only becomes more essential that I discover more warm dishes to serve up as I kick start my day.
Enter power toast. Power toast really isn’t a thing… at least I don’t think it is. But it seems like a fitting title for my toast recipe today.
How do you turn regular toast into power toast? Easy. Its all about how you top your slice of bread.
For this recipe I combined avocado, one of my favorite spreads, with some low-fat cottage cheese in a food processor. The avocado is a great way to add a little fiber while the cottage cheese helps boost up the protein just a bit.
Combined, they make one creamy, savory spread that’s perfect for toast! I topped mine with some red pepper slices for added crunch and then sprinkled on a little cilantro and salt and pepper. It was a great combination, but if you’re making your own variety of power toast, feel free to mix it up with other crunchy vegetables that really speak to you.
