Quick, simple and oh-so-flavorful, this avocado pesto pasta with grilled chicken and cherry tomatoes will quickly become your new go-to pasta!
Confession time! One of my favorite rituals I have in place with my husband is sending him photos of my food while he is gone. Sort of a “this is what your missing” activity. He actually loves it because he knows that when I’m experimenting, recipes typically get better the second time around, so if I’m sending him a photo, that means he’ll get to eat the dish perfected when he returns.
While Aaron was away at a conference in New York, I was home with the boys. Spoiler: they did not appreciate the pasta part of this dish. Too “green” for them. But I have a pretty no-pressure cooking style and don’t expect the boys to be interested in something new I try… at least not at first. As I’ve continued to experiment with different recipes and flavor combinations, its actually been rather exciting to see how my boys warm up to a variety of foods. In most cases, they eventually give the new-to-them food a try and enjoy it. Not always, but that’s okay too. I like having the opportunity to expose them to as many different foods and flavors as possible. My hope is that even if its not something they dig now, they’ll at least be more aware and open to it when they are older and responsible for their own meals.
Since my boys weren’t super excited to try this dish, I decided to make it a dish for one. I cooked up the noodles, made the pesto, grilled the chicken, and also whipped up some marinara sauce. Surprisingly, this was rather quick work and everyone came to the dinner table happy. We also left pretty happy – and stuffed – too.
I personally found this meal to be rather flavorful, yet not overwhelming. It was a nice break from some of the heavier meals we’ve been having lately. The cold weather encourages heartier meals in my opinion, but after awhile you just need something a little lighter to balance things out.
- 2 Tbsp Avocado Pesto Sauce
- 1 cup pasta of your choice, cooked
- 3 oz chicken breast, grilled and chopped into bite size pieces
- 4 Cherry tomatoes
- Combine avocado pesto sauce and pasta in a medium bowl.
- Transfer pesto pasta mixture to serving plate or bowl.
- Top with grilled chicken and tomatoes.
- Serve and enjoy!
Be sure to grill chicken breast until internal temperature reaches 170 degrees F. This usually takes about 12-15 minutes or 6-7 minutes per side.
